Have you heard about the story of the Little Red Hen? I am sure you have. It is about a little red hen getting ready to make her bread. As she is preparing, she asks her friends the duck, the goose, the cat, and the pig to help her with a chore. Each time she asks, however, they reply, “Not I!”

Don’t worry. The Little Red Hen teaches her friends a lesson on getting out what you put in; you can share something if you helped make it, too. 

Today, instead of making plain bread, we will make some zucchini bread. My favorite! We can make it with friends or family, just like the little red hen had hoped for! But if we can’t find help when we want to make this treat, we can’t do it ourselves, like the little red hen. Instead, we have to wait for a parent or guardian to help us since we will be using a very hot stove.

To warn readers with food allergies. This recipe calls for pineapple and eggs. 

What we will need is:

  • 3 large eggs

  • 3 teaspoons of vanilla extract

  • 3 cups of all-purpose flour

  • 3 teaspoons of ground cinnamon

  • 2 cups of sugar

  • 2 cups shredded zucchini

  • 1 can of unsweetened crushed pineapple (drained)

  • 1 cup of canola oil

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1-1/2 cups of semisweet chocolate chips

  • 1/2 teaspoon baking powder

How to make zucchini bread: 

  • 1. We will combine the flour, sugar, cinnamon, baking soda, salt, and baking powder in a large bowl.

  • 2. In a small bowl, whisk/beat the eggs, oil, and vanilla.

  • 3. Mix wet and dry ingredients together until smooth.

  • 4. Add in zucchini and chocolate chips.

  • 5. Place zucchini bread into an oven that is set at 350 degrees for 60 minutes. One trick to see if your bread is ready is to take a toothpick, and if it comes out clean, you are prepared to eat!

  • 6. Serve with butter and enjoy!

I hope you enjoy this treat as much as I did. The recipe is actually from my Mom; I grew up eating this zucchini bread every year! I also loved the illustrations of JP Miller’s rendition of the Little Red Hen. He added some life to the folktale with his bright colors and innovative art style.
